SMOKED RAINBOW TROUT MELT
INGRIDENTS:

- 1 can @fishwife smoked rainbow trout
- 2 stalks of celery - diced small
- 1 shallot - minced
- 1/2 serrano - minced
- 2 tbs - chopped dill
- 2 tsp @nyshuk preserved lemon paste
- juice of half a lemon
- 1/4 cup lebneh
- salt & pep to taste
- heirloom tomatoes
- french baguette
- gruyère
- more dill for garnish
METHOD:
preheat broiler on high
in a bowl add the fish, break up/ flake with fork
add all the other ingredients, give it a good mix to combine, season w/ salt & pep
slice a piece of baguette in half , top with trout salad, thinly sliced heirloom tomatoes & shredded gruyère
place in under broiler until melty & golden brown, approximately 5 minutes depending on your oven.
garnish w/ more dill
This recipe makes two open faced melts, perfect serving for lunch for 2 pairs with salty kettle chips and a pickle.
