QUICK EASY WONTON SOUP
INGREDIENTS:
6 cups of water
2 tbs better then bullion vegan chicken flavor
1 tbs tamari
1 tbs ginger juice ( or minced ginger )
1 clove minced garlic
2 tsp sesame oil
6 scallions - thinly sliced ( whites, keep greens for garnish )
1 cup baby spinach
1 bag of your favorite dumplings ( I used Laoban veggie dumplings here )
METHOD:
1. Make broth - in a stockpot add sesame oil and stir fry the garlic and whites of scallion for 1 min.
2. Add water, bullion, tamari & ginger juice. Cover, bring to a simmer for 10-20 min.
3. Adjust seasoning if needed.
4. Bring broth to a boil, add dumplings and cook accordingly to time on bag .
5. Once dumplings are ready, turn off heat and add spinach cover let spinach wilt for a few minutes.
6. Ready to eat, add the greens of the scallion into bowls and ladle soup over. Enjoy!
7. Add chili crunch for some heat if desired.
