YUZU BUTTER SILKEN TOFU
INGREDIENTS:
1 16-oz package silken tofu
2 tbsp salted vegan butter (I suggest Miyoko’s)
2 tbsp tamari
1/4 tsp yuzu kosho
1 tsp yuzu juice
1 tbsp ground sesame seeds
Thinly sliced scallions
For serving:
warm rice and avocado or noodles
chili oil (optional)
yuzu salt or togarashi (for finishing)
METHOD:
-
Gently place the silken tofu into a microwave-safe bowl, keeping it as intact as possible. It’s okay if it breaks slightly.
-
Microwave for about 3 minutes, until warmed through. Carefully drain off any excess liquid using a spoon to hold the tofu in place.
-
While the tofu is heating, prepare your sauce: mix together tamari, yuzu kosho, and yuzu juice in a small bowl.
-
Once the tofu is drained, top with sliced vegan butter and microwave for another 30 seconds, or until the butter is fully melted.
-
Drizzle the sauce over the tofu, then top with ground sesame seeds and scallions.
-
Serve immediately with warm rice and avocado or noodles. Finish with chili oil, yuzu salt, or a pinch of togarashi if desired. Enjoy!
