GLUTEN FREE ZUCCHINI FETA FRITTERS

GLUTEN FREE ZUCCHINI FETA FRITTERS

W/ DILLY HORSERADISH SAUCE

 

INGREDIENTS:

Zucchini fritters

  • 3 medium zucchinis - grated 
  • 4 scallions - diced
  • 1/3 cup dill - chopped
  • 1/3 cup Italian parsley - finely chopped
  • 1 large egg ( 2 if your eggs are small, you can also sub for 2-3 tbs *just egg to keep vegan )
  • 1/3 cup chickpea flour 
  • 1/2 - 3/4 cup quality feta ( sub vegan feta to keep vegan )
  • 1/2 tsp aleppo pepper ( can sub 1/4 tsp red pepper flakes )
  • salt & pepper to taste 

Dipping sauce

  • 1 cup greek yogurt ( sub for plant based yogurt to keep vegan )
  • 1/4 cup dill
  • zest & juice of 1 lemon
  • 1 garlic clove grated
  • 1 tsb grated horseradish ( I love horseradish so I tend to add 1 tbs, but do to your liking )
  • salt & pepper 
  • olive oil

 

METHOD :

    1. Season your grated zucchini with a generous pinch of salt & combine, place zucchini on a cheese cloth or clean kitchen towel, wrap and squeeze out the moisture. Squeeze multiple times to get as much water out as possible. 
    2. Place zucchini back into a bowl add the next 4 ingredients mix well. Season with salt and pepper.
    3. Now add the chickpea flour combine until you see no dry bits or clumps of flour.
    4. Crumble feta into your zucchini mixture and combine.
    5. Now to cook your fritters, heat a few tbs of olive oil in a large pan on medium heat. Once your oil is warm add dollops about 1/4 a cup of your mixture, pressing down with the back of your spoon flattening the top of the fritter evenly.
    6. Fry until golden brown and crispy, flip and repeat on other side. *About 2 minutes per side. Working in batches, do not over crowd your pan.
    7. Place each fritter on a baking rack or a paper towel lined plate, season each with a sprinkle of salt while still warm. 
    8. While you finish cooking your batches of mixture, make the sauce. Combine all the ingredients for the dilly horseradish sauce in a bowl and stir, season with salt and pepper to taste and set aside.
    9. Serve your fritters with a garnish of fresh dill, a sprinkle of aleppo pepper and dollop of your dilly horseradish sauce. Ready to enjoy!
